A Farmers Market Booth Teaches Buffalo Students Full Cycle Food Production

New West High School students are already growing hydroponic lettuce, but they currently have no reliable way to bring their produce to market and engage in the full cycle of food production. To both expand student opportunity and increase access to locally grown produce, one school leader reached out to LOR with an idea. LOR’s funding will help New West High School purchase a branded pop-up canopy, folding tables and display materials, coolers and insulated storage, produce crates, packaging, and other supplies to launch a portable farmers market booth. Students will grow, harvest, package, and sell lettuce at local farmers markets, school events, and community gatherings, gaining hands-on experience in entrepreneurship, marketing, food safety, and customer service.
