Launched in 2023 to bring hot meals to Lander residents facing poverty or homelessness, the Good Portions Mobile Soup Kitchen now serves more than 50 hot meals per week. Trouble is that’s not even enough: Good Portions has found there is a need to make more food at one time to feed a crowd, especially in the winter when folks tend to cluster together, like at the warming hut—the closest thing to a homeless shelter in Fremont County—near Riverton. The warming hut struggles to get food, and while Good Portions was able to fill in the gaps last winter, it could not meet the need because the trailer lacks heat, which means the pipes in the trailer are in danger of freezing, and because there’s not enough little prep/work space in the trailer to cook for crowds efficiently. Good Portions landed on a simple equipment solution that would allow them to feed more folks at one time and reached out to LOR for help. LOR’s funding will help with the purchase of a counter fridge, a small chest freezer, and a small mini-split AC/heating unit that will allow Good Portions to create a more efficient work space and keep it warm inside during the winter so more meals can be served.
